Call them fairy cakes, cupcakes or kolwyntjies (Afrikaans for cupcake), these little pieces of cake are the darlings of all cake varieties. Casting my mind back to my childhood, I remember a cupcake being a delectable portion of either vanilla or chocolate cake, presented in a pretty pleated paper case, topped with either pastel shaded butter icing, or deep chocolate icing, and decorated with hundreds-and thousands or chocolate vermicelli. On a really good day, we got them with a shiny glazed cherry and two angelica leaves! The variety of decorations has certainly changed especially in the variety of sprinkles available. Like all else, it is the foundation that counts. A cupcake needs to be well baked, and not necessarily fancy in it’s ingredients. The decoration is what really counts, and naturally the presentation. Fashionable brides are favouring tiers of cupcakes in wrappers, themed often to match the décor, which in turn has matched their wedding invitations. Often topped off with the all important “Mother Cake” on the pinnacle, and most often iced in a traditional way, but still harmonious with the little “bridesmaids” beneath.
